YOU GUYS!!! I am in a daze over my shop opening.  I'm not kidding, I'm busy getting ready to hit the post office with everyone's goodies today and you should see my pile.  FROM the BOTTOM of my HEART I thank you for each and every purchase, every sweet word of encouragement and love.  I always say I'm overwhelmed and blessed but it's true.  I really am.  I cried a little last night just thinking about it.  And how I'm shipping items out that I made- a dream come true- to people I don't know but somehow still feel like friends.  It's astounding and I'm so grateful.  (And by the way, I'll be restocking the Ball Jar towels by Wednesday (hopefully) next week.  I always forget how fast they go and I never make enough.  So anyway... thank you.  And now I've got a fun post for you!
One of the many perks about blogging has been meeting incredible people that I'd actually like in real life.  Months ago, I got a chance to welcome sweet Debbie of Deliciously Inspired onto my sidebar as a sponsor.  She whips up yummy and nutritious items such as these stuffed apples I shared here.

She recently created an e-cookbook with some of her favorite recipes, and when she asked if I'd be interested in giving away two copies to some lucky readers, I jumped at the chance.  I'm always seeking ways to feed my constantly hungry hoodlums and what I like about Debbie's recipes, are that they don't require a ton of fuss and bother.  That's kind of a key thing at this stage of life.  I've got enough of that already with after school events, homework, ballet, my Etsy shop and life.  Ya know?  

Debbie offered to let me have a sneak peek at her cookbook and even try out a recipe for you.  Two disclaimers... We eat gluten free, so I couldn't find the pasta her recipe called for and used what I had on hand.  Also, I substituted gf soy sauce and sliced up a sweet onion that needed to be used.  I didn't want it to go to waste and this dish seemed like a good place to use it.  That said, it was YUMMY!  Lots of thai-inspired flavors.

Debbie has included recipes such as Baked Pumpkin Oatmeal, Crust-less quiche, turkey sloppy joes (my son would flip) and yogurt parfaits in her book.  The best part, it's an e-book so once you download it, it's YOURS with instant gratification.  Gotta love that.  It's priced at only $4.99 in case you aren't one of the two lucky winners.  Thai Pasta Salad:
1 pkg
Rotini Pasta (I used Vita Spelt Brand)
8 oz
Chicken, cooked and cubed, optional
1 cup
Carrots, shredded
4
Green Onions, diced
2 cups
Purple Cabbage, shredded
1/3 cup
Cilantro, finely chopped
DRESSING:

1/4 cup
Soy or Tamari Sauce
1 tsp
Sugar or Stevia
3 Tbsp
Lime or Lemon Juice
2 Tbsp
Olive Oil
1 tsp
Ground ginger
1/4 tsp
Cayenne Pepper
1/8 tsp
Pepper
Directions:
Cook rotini pasta according to package directions. Drain in a colander, rinse with cool water and place a few ice cubes in colander to help stop the cooking process. Continue to drain. Place in refrigerator to chill.
Place dressing ingredients in small bowl or mason jar and mix well.
Place pasta, dressing and remaining ingredients into large bowl and toss gently to mix. Serving Size - 4 - 6
